Chocolate Chip Cookies
- 2 1/4 c. cake flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 c. prune puree
- 2 Tbsp. butter or margarine
- 3/4 c. sugar
- 3/4 c. firmly packed light brown sugar
- 1 egg
- 2 egg whites
- 2 tsp. vanilla extract
- 1 1/4 c. semi-sweet chocolate morsels
- Heat oven to 375u0b0.
- Coat baking sheets with nonstick cooking spray.
- In medium bowl, with wire whisk, combine cake flour, baking soda and salt; set aside.
- In large bowl, with an electric mixer on medium speed, beat together prune puree, butter, sugar, brown sugar, egg, egg whites and vanilla for 2 minutes or until creamy.
- With mixer on low speed, beat in dry ingredients until incorporated.
- By hand, stir in chocolate chips.
