Sweet Potato Meringue Pie
- 1 (30 oz.) can sweet potatoes, drained and mashed
- 1 c. sugar
- 1 Tbsp. all-purpose flour
- 1/4 c. butter or margarine, melted
- 1/3 c. evaporated milk
- 1/2 c. milk
- dash of salt
- 1/8 tsp. lemon extract
- 1 1/2 tsp. vanilla extract
- 3 eggs, separated
- 1 unbaked 10-inch pastry shell
- 1/4 tsp. cream of tartar
- 1/2 tsp. vanilla extract
- 1/3 c. sugar
- Combine first 9 ingredients and egg yolks; beat until combined.
- Pour mixture into pastry shell and bake at 400u0b0 for 10 minutes.
- Reduce heat to 350u0b0 and bake for 30 additional minutes or until set.
- Beat egg whites with cream of tartar and vanilla until soft peaks form.
- Gradually add 1/3 cup sugar, one tablespoon at a time, beating until stiff peaks form.
- Spread meringue over filling, sealing to edge of pastry.
- Bake at 350u0b0 for 10 to 12 minutes or until golden.
- Cool completely before serving.
- Yield:
- 1 (10-inch) pie.
