Sweet Potato Meringue Pie

  1. Combine first 9 ingredients and egg yolks; beat until combined.
  2. Pour mixture into pastry shell and bake at 400u0b0 for 10 minutes.
  3. Reduce heat to 350u0b0 and bake for 30 additional minutes or until set.
  4. Beat egg whites with cream of tartar and vanilla until soft peaks form.
  5. Gradually add 1/3 cup sugar, one tablespoon at a time, beating until stiff peaks form.
  6. Spread meringue over filling, sealing to edge of pastry.
  7. Bake at 350u0b0 for 10 to 12 minutes or until golden.
  8. Cool completely before serving.
  9. Yield:
  10. 1 (10-inch) pie.
