Apple Cinnamon Muffins
- 1 1/2 c. all-purpose flour
- 1/2 c. Kretschmer wheat germ
- 1/4 c. plus 1 Tbsp. granulated sugar
- 1 Tbsp. baking powder
- 1 1/4 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 c. skim milk
- 3 Tbsp. vegetable oil
- 2 egg whites
- 1 c. chopped apples
- Heat oven to 400u0b0.
- Lightly spray 12 medium muffin cups with no stick cooking spray or line with paper baking cups.
- Combine flour, wheat germ, 1/4 cup sugar, baking powder, 1 teaspoon cinnamon and salt.
- Add combined milk, oil, egg whites and apples. Mix just until moistened.
- Fill muffin cups almost full.
- Combine remaining 1 tablespoon sugar and 1/4 teaspoon cinnamon.
- Sprinkle over muffins.
- Bake 18 to 20 minutes or until brown.
