Cranberry-Orange Apple Crisp
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/4 cup chilled butter or stick margarine, cut into small pieces
- 7 cups diced peeled Rome apple (about 3 pounds)
- 1 cup fresh or frozen cranberries
- 2 tablespoons granulated sugar
- 2 teaspoons grated orange rind
- 3 tablespoons orange juice
- Preheat oven to 375u0b0.
- Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, cornmeal, 1/4 cup granulated sugar, and brown sugar in a bowl; cut in butter with a pastry blender or 2 knives until mixture is crumbly.
- Combine apple and remaining ingredients in a large bowl; toss well. Spoon the apple mixture into an 8-inch square baking dish or 1 1/2-quart casserole. Sprinkle with the crumb mixture. Bake at 375u0b0 for 45 minutes or until golden brown.
