Lobster Salad With Mango And Red Onion
- 3 tablespoons fresh lime juice
- 2 tablespoons rice wine vinegar
- 1 tablespoon sugar
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 4 cooked lobster tails, sliced into medallions or chopped
- 1 cup diced mango
- 1/2 cup finely chopped jicama
- 1/4 red onion, very thinly sliced
- 1/2 jalapeno pepper, very thinly sliced
- 1/2 cup lightly packed fresh cilantro leaves
- 4 cups mixed salad greens
- Combine first 7 ingredients in a jar; cover with a lid, and shake to combine.
- Combine lobster and next 5 ingredients; toss with dressing. Divide salad greens among 4 plates; top evenly with lobster mixture.
