Rainbow Compote

  1. Combine honey, lemon juice, candied ginger and orange peel. Pour dressing over orange slices in bowl; cover and refrigerate for several hours or overnight.
  2. Chill remaining fruits.
  3. Drain oranges, reserving dressing.
  4. Arrange orange slices in bottom of compote.
  5. Top with a layer of blueberries, a layer of melon cubes and a layer of halved strawberries.
  6. Pour reserved dressing over fruit.
  7. Garnish with additional whole strawberries, if desired. Makes 10 servings.
