Florida Barbecued Country-Style Ribs
- 1/4 cup vegetable oil , divided
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 (6-ounce) can tomato paste
- 3/4 cup water
- 1/2 cup vinegar
- 2 tablespoons sugar
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons salt
- 1 teaspoon dry mustard
- 1/8 teaspoon pepper
- 1/8 teaspoon chili powder
- 4 whole cloves
- 1 bay leaf
- 3 drops hot sauce
- 5 pounds country-style pork ribs, cut into 6 serving-size pieces
- 1 tablespoon salt
- Heat 1 tablespoon oil in a medium saucepan; add onion and garlic. Cook over low heat until onion is tender.
- Add next 12 ingredients, stirring well. Bring mixture to a boil. Reduce heat; cover and simmer 1 hour. Remove whole cloves and bay leaf; discard. Set sauce aside.
- Place ribs, 1 tablespoon salt, and water to cover in a large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 30 minutes or until ribs are tender. Drain.
- Place ribs on grill over slow coals. Grill 5 minutes on each side. Brush both sides of meat liberally with sauce; grill an additional 5 minutes on each side. Serve remaining sauce with ribs.
