Chinese Not Fried Rice
- vegetable cooking spray
- 1/2 c. finely chopped onion
- 1 Tbsp. red cooking wine
- 1 Tbsp. reduced-sodium soy sauce
- 1 tsp. sesame oil (dark)
- 4 drops hot sauce
- 1 c. uncooked long grain converted rice
- 1/3 c. diagonally sliced green onion
- 1 Tbsp. pine nuts, toasted (optional)
- 2 c. low-sodium chicken broth, undiluted
- Coat a medium saucepan with cooking spray.
- Place over medium heat until hot.
- Add onion and saute 2 minutes or until tender. Add chicken broth and soy sauce, cooking wine, sesame oil and hot sauce; bring to a boil.
- Stir in rice, cover, reduce heat and simmer 25 minutes or until rice is tender and liquid is absorbed. Remove from heat.
- Stir in green onion and pine nuts.
- Yield: 6 servings.
