Cajun Rice

  1. In a large skillet, heat oil. Saute chicken livers with 1/2 teaspoon of salt until done (no pink should remain).
  2. Dice the cooked chicken livers and set aside.
  3. In the same skillet, saute onions, bell peppers and mushrooms in the margarine until soft. Add diced chicken livers and sausage.
  4. Add remaining ingredients to skillet and cook until warmed through.
  5. Makes about 8 cups.
