Christmas Coconut Cake
- 2 c. all-purpose flour
- 1 1/2 c. granulated sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 c. shortening
- 1 c. milk
- 1 tsp. vanilla
- 4 egg whites
- 2/3 c. flaked coconut
- Tutti-Frutti Filling (recipe follows)
- 1 c. chilled whipping cream
- 1/4 c. powdered sugar
- 3/4 tsp. almond extract
- Heat oven to 350u0b0.
- Grease and flour 2 round pans, 9 x 1 1/2 inches.
- Beat flour, granulated sugar, baking powder, salt, shortening, milk and vanilla in large bowl on low speed, scraping bowl constantly, 30 seconds.
- Beat on high speed, scraping bowl occasionally, 2 minutes.
- Beat in egg whites on high speed, scraping bowl occasionally, 2 minutes.
- Stir in coconut.
- Pour into pans.
