Peaches And Cream Cheese Cake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 pkg. vanilla pudding (not instant mix)
- 3 Tbsp. margarine
- 1/2 c. milk
- 1 egg
- 15 to 20 oz. can well-drained peaches
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 3 Tbsp. peach juice
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- Mix flour, baking powder, salt, vanilla pudding, margarine, milk and egg for 2 minutes.
- Pour into a 9 or 10-inch greased pie plate.
- Arrange on top the peaches.
- In a small bowl mix cream cheese, sugar and peach juice.
- Spoon on top of the peaches to within 1-inch of the crust.
- Be careful not to get too close to edge of plate.
- Sprinkle the whole pie with a mixture of 1 tablespoon sugar and 1/2 teaspoon cinnamon.
- Bake at 350u0b0 for 30 to 35 minutes.
