Bulgar Primavera Salad(Tabouli)
- 1 c. bulgar wheat
- 2 c. water
- 1 1/3 c. chopped tomato
- 1/2 c. dried currants
- 1/2 c. hulled, roasted sunflower seeds
- 1/3 c. shredded carrot
- 2 green onions, finely chopped
- 1 small clove galic
- 2 Tbsp. finely chopped fresh mint
- 1 Tbsp. finely chopped fresh basil
- pinch of dried oregano
- 1/4 c. red wine vinegar
- 1/4 c. tamari or regular soy sauce
- 1/4 c. olive oil
- Place bulgar in large, heatproof bowl.
- Bring water to boiling.
- Pour over bulgar.
- Let stand 20 minutes.
- Drain bulgar thoroughly.
- Return bulgar to large bowl.
- Add tomatoes, currants, sunflower seeds, carrot, green onion, garlic, mint, basil and oregano.
- Whisk together tamari, vinegar and oil in small bowl. Pour over bulgar mixture.
- Mix well.
