Sicilian Meat Roll

  1. In a bowl, combine the eggs and tomato juice.
  2. Stir in bread crumbs, parsley, oregano, salt, pepper and garlic.
  3. Add ground beef; mix well.
  4. On wax paper or foil, pat meat to a 10 x 8 inch rectangle.
  5. Arrange ham slices on top of meat, leaving a small margin around.
  6. Reserve 1 slice of cheese.
  7. Tear up remainder of cheese; sprinkle over ham.
  8. Starting with short end, carefully roll up meat using paper to lift; seal edges and ends.
  9. Place roll seam side down in a 13 x 9 x 2-inch baking pan.
  10. Bake at 350u0b0 until done, about 1 1/4 hours.
  11. (Center will be pink due to ham.)
  12. Cut reserved cheese slice into 4 triangles and overlap atop meat. Return to oven until cheese melts.
  13. Serves 8.
