Cajun Chicken With Okra
- 2 teaspoons vegetable oil
- 4 (4-ounce) skinned, boned chicken breast halves
- 2/3 cup low-salt chicken broth
- 1/4 teaspoon salt
- 1/8 teaspoon crushed red pepper
- 1 (14 1/2-ounce) can Cajun-style stewed tomatoes, undrained and chopped
- 2 garlic cloves, crushed
- 1 (10-ounce) package frozen cut okra, thawed
- 1 1/2 tablespoons all-purpose flour
- 2 tablespoons water
- 1/4 teaspoon hot sauce
- 2 cups cooked long-grain rice
- Heat oil in a large nonstick skillet over medium-high heat until hot. Add chicken; cook 2 minutes on each side. Add broth, salt, pepper, tomatoes, and garlic; cover, reduce heat, and simmer 8 minutes or until chicken is done. Add okra; simmer, covered, 3 minutes.
- Combine flour and water in a small bowl, stirring with a whisk; add to skillet. Simmer, uncovered, 2 minutes or until thick. Stir in hot sauce. Serve over rice.
