Cornish Hens With Wild Rice Stuffing

  1. Heat butter in skillet over medium heat. Add celery and saut3 2 minutes. Remove celery from pan and set aside.
  2. Assemble and attach KitchenAid(R) Food Grinder attachment to the KitchenAid(R) Stand Mixer. Using the coarse grinding plate, turn to Speed 4 and grind celery and apricots into a bowl. Add butter from saut3 pan, rice, salt and allspice; mix well.
  3. Stuff each hen with mixture. Truss hens and crisscross 2 strips of bacon over each hen. Place on rack in baking pan and bake at 350u0b0F for 1 1/2 to 2 hours. Serve immediately.
