Pork With Grapefruit-Mint Salsa
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound pork tenderloin, trimmed
- Cooking spray
- 1/2 cup finely chopped dried apricots
- 1/2 cup finely chopped yellow bell pepper
- 1/2 cup refrigerated red grapefruit sections, drained
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped fresh mint
- 1 tablespoon lemon juice
- 1/2 teaspoon sugar
- Preheat oven to 425u0b0.
- Combine allspice and next 5 ingredients in a small bowl. Stir well, and rub evenly on pork. Place pork on a jelly roll pan coated with cooking spray.
- Bake at 425u0b0 for 28 minutes or until a thermometer registers 160u0b0 (slightly pink).
- While meat cooks, combine apricots and next 6 ingredients in a medium bowl. Let stand 30 minutes. Serve salsa over pork.
