Baked Pear Pancake

  1. Peel and core pears; slice.
  2. In large oven proof frying pan melt 1 Tbsp. butter over medium heat.
  3. Add pears; sprinkle with suger.
  4. Cook until tender and golden brown (about 10 minutes). Remove all pears and juice; wipe pan clean.
  5. Add 2 Tbsp. butter to pan and melt.
  6. Beat eggs, milk, flour, salt, nutmeg and cinnamon until almost smooth; leave some lumps.
  7. When butter is hot pour batter into pan.
  8. Arrange pears in center of batter and any juice.
  9. Bake at 425u0b0 until puffed and golden brown (15-20 minutes).
  10. Sprinkle with confectioners sugar.
  11. Note:
