Baked Pear Pancake
- 2 pears
- 3 Tbsp. butter or margarine
- 3 Tbsp. sugar
- 3 eggs
- 1/2 c. milk
- 1/2 c. flour
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1/8 tsp. cinnamon
- Peel and core pears; slice.
- In large oven proof frying pan melt 1 Tbsp. butter over medium heat.
- Add pears; sprinkle with suger.
- Cook until tender and golden brown (about 10 minutes). Remove all pears and juice; wipe pan clean.
- Add 2 Tbsp. butter to pan and melt.
- Beat eggs, milk, flour, salt, nutmeg and cinnamon until almost smooth; leave some lumps.
- When butter is hot pour batter into pan.
- Arrange pears in center of batter and any juice.
- Bake at 425u0b0 until puffed and golden brown (15-20 minutes).
- Sprinkle with confectioners sugar.
