Western Style Stew
- 2 sliced onions
- 2 chopped green peppers
- 1 c. diced celery
- 3 Tbsp. shortening
- 2 lb. moose stew meat (1-inch cubes)
- 1 clove garlic, minced
- 1 tsp. salt
- 16 oz. tomato sauce
- 1 bay leaf
- 2 tsp. chopped green chilies
- 2 c. water
- 3 diced potatoes
- 1 small turnip, diced
- 6 chopped carrots
- 1/4 c. water and 3 Tbsp. flour, mixed to a smooth paste
- Saute onions, peppers and celery in shortening. Add meat and salt. Brown meat on all sides, stirring frequently. Add tomato sauce, bay leaf, green chilies and water. Simmer 3 to 4 hours. Add potatoes, turnip and carrots. Thicken to desired consistency with flour and water paste. Simmer 1 hour or until vegetables are tender.
