Garlic And Herb Chicken

  1. In microwave baking dish, mix together olive oil, tomato, celery, parsley flakes, garlic, salt, pepper, oregano, basil and nutmeg.
  2. Microwave on High for 3 minutes.
  3. Stir.
  4. Add chicken, covering with mixture.
  5. Cover; refrigerate overnight or for at least 3 hours.
  6. When ready to cook, cover baking dish with wax paper; microwave on High for 10 minutes more.
  7. Let stand 5 minutes.
  8. If fork cannot be inserted in chicken with ease, return to microwave for brief additional cooking.
  9. To serve, remove garlic slices and spoon sauce over chicken.
  10. Makes 4 servings.
