Easy Pickled Shrimp
- 2 teaspoons olive oil
- 36 peeled and deveined medium shrimp (about 1 pound)
- 2 garlic cloves, minced
- 1/2 cup thinly sliced green bell pepper strips
- 1 medium red onion, quartered and thinly sliced crosswise
- 1/2 lemon, thinly sliced
- 1 1/2 cups water
- 1/2 cup white vinegar
- 1 tablespoon Old Bay seasoning
- 2 tablespoons fresh lemon juice
- 1 teaspoon pickling spice
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 3 bay leaves
- Heat oil in a large nonstick skillet over medium-high heat. Add shrimp and garlic; saute 3 minutes or until shrimp begin to turn pink. Place shrimp in an 11 x 7-inch baking dish. Top evenly with bell pepper, onion, and lemon slices.
- Combine water and next 7 ingredients in a small bowl; pour evenly over shrimp. Cover and marinate shrimp at least 24 hours. Remove shrimp from marinade with a slotted spoon, and serve with wooden picks.
