Chunky Chipotle Chili
- 2 tablespoons Shedd's Spread Country Crock(R) Omega Plus
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 1 clove garlic, finely chopped
- 1 1/2 teaspoon ground chipotle chile pepper
- 1 pound lean ground turkey
- 1 can (16 oz.) red kidney beans, rinsed and drained
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (8 oz.) tomato sauce
- In 4-quart saucepot, melt Shedd's Spread Country Crock(R) Omega Plus over medium heat and cook onion, green pepper, garlic and ground chipotle chile pepper, stirring occasionally, 5 minutes or until vegetables are tender. Stir in ground beef and cook until browned, about 5 minutes. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and cook, stirring occasionally, 5 minutes or until heated through. Serve, if desired, over hot cooked rice with shredded cheddar cheese.
