Raisin Cake

  1. Beat margarine in bowl until light and fluffy.
  2. Add eggs, one at a time, beating well.
  3. Add flour, salt and sugar.
  4. Dissolve yeast in water.
  5. Stir into dough with vanilla and lemon extract. Stir in raisins.
  6. Butter a 10-inch tube pan.
  7. Sprinkle the bottom with almonds.
  8. Turn dough into pan and let rise to almost the top of the pan.
  9. Bake at 350u0b0 for 45 minutes.
  10. Cool in pan for 20 minutes.
  11. Invert onto cake plate and sprinkle with powdered sugar.
  12. Also good if drizzled with rum flavored confectioners glaze.
