Raisin Cake
- 1 c. margarine
- 5 eggs
- 2 1/3 c. flour
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 2 Tbsp. warm water
- 1 pkg. yeast
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 1 c. raisins
- 1/2 c. slivered almonds
- 2 Tbsp. powdered sugar
- Beat margarine in bowl until light and fluffy.
- Add eggs, one at a time, beating well.
- Add flour, salt and sugar.
- Dissolve yeast in water.
- Stir into dough with vanilla and lemon extract. Stir in raisins.
- Butter a 10-inch tube pan.
- Sprinkle the bottom with almonds.
- Turn dough into pan and let rise to almost the top of the pan.
- Bake at 350u0b0 for 45 minutes.
- Cool in pan for 20 minutes.
- Invert onto cake plate and sprinkle with powdered sugar.
- Also good if drizzled with rum flavored confectioners glaze.
