Apple-Ginger Muffins
- 1 1/4 cups quick-cooking oats
- 1 cup 1% low-fat milk
- 1/2 cup packed brown sugar
- 3 tablespoons vegetable oil
- 3 tablespoons honey
- 1 teaspoon grated peeled fresh ginger
- 1 large egg
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup diced peeled apple
- Cooking spray
- 2 teaspoons quick-cooking oats
- Preheat oven to 400u0b0.
- Combine first 7 ingredients in a large bowl; stir with a whisk. Let stand 15 minutes.
- Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl; make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moist. Gently fold in apple.
- Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle 2 teaspoons oats over top of batter.
- Bake at 400u0b0 for 18 to 20 minutes or until muffins spring back when touched. Serve warm.
