Christmas Bread
- 3 pkg. or 3 Tbsp. dry yeast
- 3 c. scalded milk
- 2 eggs, beaten
- 1/2 c. lukewarm water
- 10 c. flour
- 1 c. sugar
- 3/4 c. butter
- 2 tsp. salt
- 1/2 c. chopped currants
- 1/2 c. chopped citron
- 3/4 c. raisins
- 1/2 c. chopped candied cherries
- 2 tsp. cardamon
- Mix yeast, sugar, salt, cardamon and 4 cups of flour in a large bowl.
- Heat milk, water and butter to scalding (130u0b0).
- Add flour mixture and beat well for 10 minutes.
- Add eggs, one at a time, and beat thoroughly after each one.
- Add fruit and remaining flour; mix well.
- Knead for 10 minutes.
- Grease bowl, turn bread into the bowl, cover with a damp cloth and let rise until doubled. Punch down, knead and let rise until doubled again.
- Punch down and shape into 4 loaves.
- Put into greased pans.
- Brush top with egg white and let rise until doubled in the pans.
- Bake at 350u0b0 for 35 to 40 minutes.
- Brush with melted butter and sprinkle with cinnamon sugar.
- Slice and serve toasted with butter.
