Quick-Trick Brazil Nut Fruit Cake

  1. Butter 2 loaf pans (10 1/4 x 3 5/8 x 2 5/8-inch).
  2. Line with 2 strips waxed paper, extending paper above rim.
  3. Butter again; set aside.
  4. Put Brazil nuts in a large mixing bowl with graham crackers, raisins, glazed fruit and glazed cherries.
  5. Place marshmallows in top of double boiler with orange juice, vanilla, orange rind and spices.
  6. Heat over boiling water, stirring occasionally, until marshmallows are melted.
  7. Add Brazil nut-fruit mixture; blend thoroughly.
  8. Turn into prepared pans, pressing with spoon.
  9. Fold waxed paper over cake.
  10. Press down with hands.
  11. Chill in refrigerator 6 to 8 hours.
