Zwiebach
- 2 yeast cakes
- 1 Tbsp. sugar
- 2 c. warm water
- 1 c. warm milk
- 6 Tbsp. melted lard
- 3/4 c. sugar
- 2 tsp. salt
- 3 eggs
- 11 1/2 c. flour
- Let the yeast melt in the warm water.
- Mix all the ingredients.
- Save about 4 cups of the flour for later.
- With electric beater, beat eggs, sugar and salt.
- Add milk and lard. Add flour until it makes a nice dough.
- Let rise in a warm place until double in size.
- Punch down with floured hands and let rise again.
- Flour hands and form into small loaves in pan (15 x 15-inch).
- Let rise again, then bake at 350u0b0 until light brown. Take out and let cool and then pull or cut loaves apart, then put back into pan to dry in a 300u0b0 oven; do not burn.
- Can be frozen or stored in a closed container.
