Hidden Treasure Cake

  1. Sift flour, 3/4 cup sugar and salt together.
  2. Beat egg whites with cream of tartar in large mixing bowl until soft mounds form. Gradually add 3/4 cup sugar, beating constantly until very straight peaks form.
  3. Mix egg yolks, apricot nectar, rum flavoring and orange rind.
  4. Add dry ingredients in mixing bowl.
  5. Beat 1 minute with mixer on medium speed.
  6. Add 1/3 at a time to egg whites, folding gently but thoroughly.
  7. Put in ungreased 10-inch tube pan.
  8. Bake at 350u0b0 for 45 to 50 minutes.
  9. Invert and cool. Slice into 3 layers and spread Apricot-Orange filling between layers, then frost top and sides with Snowy White Frosting.
