Hidden Treasure Cake
- 1 1/2 c. flour
- 1/2 tsp. salt
- 3/4 tsp. cream of tartar
- 1/2 c. apricot nectar
- 1 tsp. grated orange rind
- 3/4 c. sugar
- 6 eggs, separated
- 1 1/2 c. sugar
- 1 tsp. rum flavoring
- Sift flour, 3/4 cup sugar and salt together.
- Beat egg whites with cream of tartar in large mixing bowl until soft mounds form. Gradually add 3/4 cup sugar, beating constantly until very straight peaks form.
- Mix egg yolks, apricot nectar, rum flavoring and orange rind.
- Add dry ingredients in mixing bowl.
- Beat 1 minute with mixer on medium speed.
- Add 1/3 at a time to egg whites, folding gently but thoroughly.
- Put in ungreased 10-inch tube pan.
- Bake at 350u0b0 for 45 to 50 minutes.
- Invert and cool. Slice into 3 layers and spread Apricot-Orange filling between layers, then frost top and sides with Snowy White Frosting.
