Soba Noodle Salad With Pork, Snap Peas, And Radishes
- 6 ounces soba noodles
- 1 1/2 cups diagonally sliced sugar snap peas
- 2 1/2 tablespoons fresh lime juice
- 1 tablespoon lower-sodium soy sauce
- 2 teaspoons dark sesame oil
- 1/2 teaspoon sambal oelek
- 1/4 teaspoon kosher salt
- 1/2 cup thinly sliced radishes
- 1/4 cup chopped fresh mint
- Cook soba noodles according to package directions. Add sugar snap peas during last 1 minute of cooking. Drain; rinse with cold water. Drain. Combine lime juice, soy sauce, sesame oil, sambal oelek, and salt in a large bowl. Add noodle mixture, radishes, mint, and chopped pork slices; toss gently to combine.
