New Potatoes With Garlic
- 2 lb. very small new potatoes (unpeeled; if you can't find very small ones, use larger ones cut into small chunks with the skin on)
- 1/4 c. butter
- 4 Tbsp. olive oil
- 8 cloves garlic, minced (yes, that's right; 8)
- 1 Tbsp. salt
- 1 tsp. salt
- 1 tsp. black pepper
- 1 1/2 Tbsp. lemon juice
- 1/2 tsp. Tabasco sauce
- Cook the potatoes in boiling salted water until tender, 20 to 25 minutes. Drain and set aside. In a large saucepan or skillet, heat the butter and oil. Add the potatoes and saut for 8 to 10 minutes, stirring frequently. Add the garlic, salt, pepper, lemon juice and Tabasco sauce; lower the heat and cook for 3 to 4 minutes or until the garlic turns a golden color. Be careful not to burn the garlic. Serves 6. Probably can't be frozen. Can make ahead.
