Easy Fruit Cake
- 1 lb. raisins or currants
- 1 apple, chopped
- rind and juice of 1 lemon or orange
- 1 1/2 c. cranberry juice
- 1/2 lb. butter or margarine, melted
- 4 large eggs, beaten
- glazed fruit (optional)
- 1 c. chopped walnuts
- 1 1/2 c. flour
- 1 1/4 c. sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- Boil together raisins or currants, apple, rind and juice of lemon or orange and cranberry juice 5 minutes.
- Cool.
- Add butter or margarine, eggs, glazed fruit and walnuts.
- Sift together flour, sugar, salt, baking powder, baking soda, cinnamon and allspice.
- In large bowl, mix all ingredients well.
- Put in greased and floured deep baking pan.
- Bake at 325u0b0 for about 2 hours or test with toothpick.
- (Will keep a long time stored in a sealed tin.)
