Baked Pears Stuffed With Almonds

  1. Heat oven to 375 degrees. Mix all ingredients except pears in shallow glass or ceramic baking dish large enough to fit pear halves in a single layer. Place pears in dish, cut sides down. Bake 15 to 25 minutes until pears are just tender. Meanwhile, prepare Almond Filling.
  2. Ingredients for almond filling:
  3. 1/2 cup whole natural almonds
  4. 3 Tbs. sugar
  5. 1/4 to 1/2 tsp. finely grated lemon peel
  6. 1/4 tsp. ground cardamom
  7. 1/8 tsp. salt
  8. 1/2 egg white (about 1 1/2 Tbs.)
  9. Vanilla ice cream
  10. In bowl of food processor fitted with steel blade combine all ingredients except ice cream. Process until almonds are very finely chopped.
