Cherokee Casserole
- 1 lb. ground beef
- 3/4 c. chopped onion
- 1 1/2 tsp. salt
- pepper to taste
- 1/2 bay leaf
- 1/8 tsp. oregano
- 1/8 tsp. thyme
- 1/8 tsp. garlic powder
- 2 c. tomatoes
- 1 can mushroom soup
- 1 c. Minute rice
- 6 stuffed olives, sliced
- 2 to 3 slices cheese, cut in strips
- Brown the meat and add onions.
- Cook over medium heat until the onion is tender.
- Stir in the seasonings, tomatoes, soup, rice and half of the olives.
- Simmer for 5 minutes, stirring occasionally.
- Spoon into a baking dish and top with cheese strips.
- Broil until the cheese is melted and decorate the casserole with the remaining olive slices.
- Black olives may be substituted for the green olives.
- Serves 4 to 6.
