Orange Roughy With Tomatoes

  1. Preheat oven to 350u0b0.
  2. Chop and seed tomato.
  3. In ovenproof skillet, over medium heat, saute onion and garlic in margarine until soft, about 5 minutes.
  4. Stir in tomato and seasonings.
  5. Cover and simmer for 5 minutes.
  6. Place fish in skillet; cover with sauce. Pour wine over fish.
  7. Cover and bake for 15 to 20 minutes or until fish flakes with fork.
  8. Remove fish to heated platter.
  9. Reduce sauce on top of range to 1/3 cup.
  10. Stir in tomato paste and pour over fish.
  11. Serve with lemon wedges.
