Fruit & Nut-Topped Oatmeal
- 2 cups fat-free milk
- 4 tablespoons Shedd's Spread Country Crock(R) Calcium plus Vitamin D or Omega Plus, divided
- 1/2 teaspoon ground cinnamon
- 2 cups uncooked old fashioned or quick-cooking oats
- 2 large bananas, halved lengthwise and sliced
- 2 cups fresh blueberries
- 1/4 cup chopped walnuts
- 1 tablespoon honey
- In 2-quart saucepan, bring milk, 2 tablespoons Shedd's Spread Country Crock(R) Calcium plus Vitamin D and cinnamon to a boil over medium-high heat. Add oats and return to a boil. Reduce heat to medium and cook, stirring occasionally, 1 minute for quick-cooking oats or 5 minutes for old fashioned oats. Cover and keep warm.
- Meanwhile, in 10-inch nonstick skillet, melt remaining 2 tablespoons Spread over medium-high heat and cook bananas, stirring occasionally, 2 minutes or until bananas begin to soften. Stir in remaining ingredients and cook, stirring occasionally, 3 minutes or until berries begin to soften and burst. Serve fruit over hot oatmeal.
