Nina Bemus' Favorite Chicken Spaghetti
- 1 (4 to 5 lb.) stewing hen
- 3 chopped green peppers
- 2 chopped stalks celery
- 3 chopped large onions
- 2 Tbsp. chili powder
- 1 lb. box spaghetti
- salt
- 1 can mushroom soup
- 1 large can chopped mushrooms
- 1 small jar pimentos
- 3/4 lb. grated sharp Cheddar cheese
- pepper
- Stew hen with salt, pepper and a stalk of celery until tender. Cool and remove bones; cut into bite size.
- Cook peppers, celery and onions in a small amount of broth until tender.
- Add chili powder, soup, mushrooms and pimentos.
- Cook spaghetti as directed on box.
- Mix chicken, vegetables and spaghetti together.
- Pour into large casserole.
- Cover with grated cheese and bake at 350u0b0 until mixture bubbles.
