Orange Pineapple Chicken Stir-Fry(Lo-Fat)
- 1 1/2 lb. boneless, skinless chicken breasts, cut in thin slices (about 2 whole breasts)
- 1 clove garlic, minced
- 1 medium onion, sliced in rings
- 1 (6 oz.) pkg. frozen snow pea pods
- 1/2 tsp. ginger
- 1 (14 oz.) can pineapple tidbits (in their own juice), drained
- 2 Tbsp. cornstarch
- 1/2 c. chicken broth, divided
- 1 (11 oz.) can mandarin oranges, drained
- 1 tsp. salt
- 1/4 tsp. pepper
- Preheat heavy frypan or wok about 3 minutes on medium-high heat.
- Spray with nonstick corn oil cooking spray. Add chicken strips and garlic; stir-fry about 3 minutes.
- Increase heat to high and add onion and snow peas. Stir-fry about 3 minutes. Add salt, pepper, ginger and pineapple.
- Continue to stir-fry about 3 minutes more.
