Spiced Zucchini Bread

  1. Combine flour, soda, salt, baking powder, cinnamon and nuts; set aside.
  2. Beat eggs lightly in a large mixing bowl; add sugar, oil and vanilla and beat until creamy.
  3. Stir in zucchini and pineapple.
  4. Add dry ingredients, stirring only until dry ingredients are moistened.
  5. Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans.
  6. Bake at 350u0b0 for 1 hour or until done.
  7. Cool 10 minutes before removing from pans; turn out on rack and cool completely.
  8. Yield:
  9. 2 loaves.
