Pasta With Peppers And Shrimp
- 1 (6 oz.) jar marinated artichoke hearts, cut into pieces
- 6 Tbsp. olive oil
- 3 green and/or red peppers
- water
- 1/2 lb. linguine
- 6 to 8 garlic cloves, minced
- 1 c. sliced black olives
- 1 lb. shrimp, shelled
- 1 tsp. salt
- 1 tsp. red pepper flakes
- 1 c. grated Parmesan cheese
- juice of 1 lemon
- freshly ground pepper to taste
- Strain marinade from artichokes and pour with olive oil into pan.
- Saute peppers until limp.
- While they are cooking, boil water in another big pot and cook pasta al dente.
- When peppers are cooked, add garlic, olives, shrimp, salt and red pepper flakes.
- Saute until garlic is cooked.
- When pasta is cooked, drain and toss with contents of pan along with artichokes, cheese and lemon juice.
- Season with freshly ground pepper.
- Serves 4.
