Beef Stroganoff (Governor Jim Guy Tucker'S Favorite Recipe)(Grandma'S Recipe)

  1. Trim fat from beef and cut filet crosswise into 1/2-inch thick slices.
  2. Cut each slice across grain into 1/2-inch wide strips (about 2 inches long).
  3. Slowly heat large, heavy skillet.
  4. Melt 1 tablespoon butter; add beef strips, just enough to cover skillet bottom.
  5. Over high heat, sear quickly on all sides.
  6. Remove with tongs as meat finishes browning (it should be brown on outside and rare on inside).
