Breaded Fish Italian Style
- 4 (6-ounce) grouper or perch fillets (1 inch thick)
- 1/8 teaspoon salt
- Cooking spray
- 2 (1-ounce) slices white bread, toasted
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 garlic cloves, minced
- 4 lemon wedges
- Prepare Tomato-Basil Relish; set aside.
- Preheat oven to 425u0b0.
- Sprinkle fish with 1/8 teaspoon salt; place on a baking sheet coated with cooking spray.
- Place bread in food processor; process until coarsely ground. Combine breadcrumbs, basil, and next 5 ingredients in a small bowl. Spoon breadcrumb mixture over fish, pressing lightly to coat.
- Bake at 425u0b0 for 15 minutes or until fish flakes easily when tested with a fork. Serve with Tomato-Basil Relish and lemon wedges.
