Mark'S Salsa
- 4 cups chopped tomatoes
- 4 cups chopped sweet and/or hot peppers
- 2 cups chopped onions
- 2 cups vinegar
- 2 cups pureed tomatoes
- 1 (4-ounce) can tomato paste
- 1 cup firmly packed brown sugar (Add more if needed)
- 10 garlic cloves, chopped
- 2 tablespoons Italian seasoning
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- Combine first 11 ingredients in a saucepan over medium-low heat for 20 minutes, stirring occasionally.
- Add basil and remaining herbs. Remove from heat. Serve immediately or chill.
- (This recipe makes a 2 1/2-quart batch. You may want to half it.)
