Chicken Fajitas
- 2 plus Tbsp. fat-free chicken broth
- 3 large cloves garlic, chopped
- 2 c. sliced onion, cut into crescents
- 1 lb. boneless, skinless chicken breasts, cut into 1-inch strips
- 1 medium green pepper, cored, seeded and cut into thin strips
- 1/2 red pepper, cored, seeded and cut into thin strips
- 1/2 yellow pepper, cored, seeded and cut into thin strips
- 1/4 tsp. cumin
- dash of cayenne pepper
- 1/2 tsp. chili powder
- 1 Tbsp. salsa
- 1 Tbsp. lime juice
- 12 corn or flour tortillas
- Heat broth in a large skillet over medium-high heat.
- Stir-fry garlic, onion and chicken for 10 minutes (drain off some liquid if more than 1/4 cup juices is collected).
- Add pepper and seasonings and stir-fry additional 8 minutes. Stir in salsa and lime juice. Heat thoroughly another 2 or 3 minutes and serve immediately.
