Cheesy Orzo
- 1 1/4 c. orzo pasta
- 1 onion, chopped
- 1 1/2 Tbsp. reduced-calorie margarine
- 1 1/2 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 1 1/2 c. skim milk
- 1 1/2 tsp. fresh or 1/2 tsp. dried thyme
- 1/3 c. grated Parmesan cheese
- Parmesan cheese curls and thyme sprig for garnish
- Prepare orzo pasta according to package directions; drain. Meanwhile, in small saucepan, saute onion in margarine for 5 minutes, until translucent.
- Stir in flour and salt; cook 1 minute.
- Gradually stir in milk and thyme.
- Cook, stirring constantly, until mixture thickens.
- Reduce heat to low; stir in Parmesan cheese.
- Continue cooking 3 to 4 minutes, until cheese melts.
- Stir orzo into cheese sauce.
- Garnish with Parmesan cheese curls and thyme sprig.
