Easy Chicken Divan
- 2 (10 oz.) pkg. broccoli florets
- 3 to 4 boneless cooked chicken breasts (may be boiled for a few minutes)
- 2 cans cream of chicken soup (undiluted)
- 1 c. mayonnaise
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 3/4 c. grated sharp Cheddar cheese
- 1 c. crushed croutons (or 1 c. Pepperidge Farm seasoned stuffing mix)
- 2 Tbsp. margarine
- Cook broccoli until slightly tender; drain.
- Arrange broccoli in greased baking dish, 9 x 13-inch.
- Place chicken on top. (Optional: Cut chicken into bite-size pieces.)
- Combine soup, mayonnaise, lemon juice and curry powder; pour over chicken. Sprinkle with grated Cheddar cheese.
- Melt margarine; add crumbs and sprinkle over top.
- Bake at 350u0b0 for 25 to 30 minutes.
