Spicy Hoppin John Soup

  1. Soak peas in water overnight or bring to a boil; cover, reduce heat and simmer 3 minutes.
  2. Let stand for 1 hour.
  3. Drain tomatoes, reserve liquid, then chop tomatoes.
  4. Add tomatoes and liquid to peas.
  5. Add remaining ingredients, except rice and meat.
  6. Cover and cook on low heat 3 to 4 hours or until peas are tender.
  7. Dice cooked meat and return to peas.
  8. Add cooked rice, cover and simmer 30 minutes.
  9. Remove bay leaf.
  10. Serve.
  11. It's delicious!
