Opera Fudge

  1. Butter sides of heavy 2 quart saucepan.
  2. In it, combine sugar, milk, cream, corn syrup and salt.
  3. Cook and stir over medium heat until sugar dissolves and mixture comes to boiling.
  4. Cook to soft ball stage (236u0b0).
  5. Immediately remove from heat.
  6. Cool until lukewarm (110u0b0) without stirring.
  7. Add butter or margarine and vanilla.
  8. Beat vigorously until mixture becomes very thick and starts to lose its gloss.
  9. Quickly stir in cherries or nuts or both and pour into a buttered shallow pan or platter.
  10. Mark while warm.
  11. Cut when firm.
