Banana Sour Cream Bars
- 1 1/2 c. sugar
- 1/2 c. butter
- 1 c. sour cream
- 2 eggs
- 1 1/2 c. mashed ripe bananas
- 2 Tbsp. vanilla
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 c. chopped nuts
- 8 oz. cream cheese
- 1 tsp. vanilla
- 1/4 c. butter
- 1 box powdered sugar
- Cream first 4 ingredients together for one minute.
- Add bananas and vanilla and mix for one minute.
- Add flour, salt, soda and nuts.
- Mix for one minute (do not overmix).
- Place in cookie sheet pan.
- Bake at 375 degrees for 20-25 minutes.
- For icing, cream remaining ingredients on high until fluffy.
- A small amount of milk may be added to thin icing.
- Spread over bars once they have cooled slightly.
- Store in refrigerator.
