Pan-Seared Pork Chops With Applesauce
- 4 cups sliced peeled Red Delicious apple (about 2)
- 1/4 cup water
- 2 tablespoons brown sugar
- 1 tablespoon cider vinegar
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 teaspoon canola oil
- 4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Combine the first 5 ingredients in a medium microwave-safe bowl, and toss well. Cover with plastic wrap, and microwave at HIGH 12 minutes or until tender. Cool 5 minutes. Place apple mixture in a food processor, and process until smooth. Stir in 1/8 teaspoon salt.
- Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork on both sides with 1/4 teaspoon salt and pepper; add to pan. Cook 4 minutes on each side or until pork is done. Let stand 5 minutes. Serve with applesauce.
