Shrimp Creole
- 1/2 c. chopped onion
- 1/4 c. chopped celery
- 1/2 c. chopped green pepper
- 2 Tbsp. margarine
- 1 clove garlic, minced
- 1 (16 oz.) can tomato sauce
- 1 tsp. salt
- 2 tsp. dried parsley
- 1/4 tsp. pepper
- 1 (8 oz.) can mushrooms
- 1 (10 oz.) pkg. frozen cooked shrimp, thawed
- 2 c. cooked brown rice (white will work)
- In a 2-quart microproof casserole, combine onion, celery, green pepper, margarine and garlic.
- Cover; microwave on High for 3 minutes.
- Stir in tomato sauce, salt, parsley, pepper, mushrooms and shrimp.
- Cover; microwave on Medium for 5 minutes.
- Stir.
- Add cooked rice; microwave on Medium for 5 minutes.
- Let stand, covered, for 10 minutes before serving.
