Fudgy Banana Brownie Cake

  1. Heat oven to 350u0b0.
  2. Spray 12 cup fluted tube pan with vegetable cooking spray.
  3. In blender, puree bananas (to yield 1 1/2 cups.)
  4. In medium bowl, stir together bananas, corn syrup, buttermilk, oil and vanilla.
  5. In large mixer bowl, stir together flour, sugar, cocoa, cinnamon, baking soda and salt.
  6. Add banana mixture to flour mixture; beat until well blended.
  7. In small mixer bowl, beat egg whites until stiff; fold small amount into batter. Fold in remaining egg whites.
  8. Pour batter into prepared pan. Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean.
  9. Cool 10 minutes; invert cake onto wire rack. Cool completely.
  10. Place on serving plate.
  11. Pour banana fudge topping over cake.
  12. Makes 16 servings.
